About this Recipe

Oven Roasted to a bright green perfection, perfectly seasoned, tender but not stringy. This is how Asparagus is meant to be. This simple recipe will make the perfect side dish to any entrée. All you need is a 6 cup rectangle glass dish (metal will work but not as well in my experience) , some heavy duty foil, and a few seasonings.

There are many ways you can start off Asparagus, Some like to blanch and shock them first, but I don’t feel like that’s necessary beyond getting restaurant quality color, I also don’t want an extra pot to clean.

Make sure your Asparagus is fat, the long skinny ones don’t tend to come out as good. Sometimes the organic section has better options for this.

Don’t peel your Asparagus, its not necessary.

Hearty Turkey Chili

This prefect combination of classic chili spices and lean turkey make this an excellent choice for those looking for full chili flavor with a much leaner protein.
You can make this in your slow cooker, on the stove, or in your instant pot!
You can also use lean ground beef instead if turkey isn’t your style. Just make sure to pick up some high quality spices.

  • Cast Iron or non-stick Skillet

Ingredients
  

Herbs & Spices

  • 4 Tbsp Chili Powder
  • 2 tsp Ground Cumin
  • 1 tsp Oregano dried
  • ¼ tsp Cayenne Pepper Optional
  • ½ tsp Salt
  • 1 tsp Coarse Ground Pepper

Liquids

  • 1 ¼ Cup Chicken Broth low sodium
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Liquid Smoke Mesquite
  • 2 tsp Olive Oil

Meat & Veggies

  • 1 LB Ground Turkey
  • 1 Each White Onion
  • 3 Each Garlic Cloves crushed
  • 1 Each Red Bell Pepper chopped
  • 1 15oz Can Sweet Corn
  • 2 15oz Can Dark Red Kidney Beans
  • 1 28oz Can Crushed Tomatoes

Instructions
 

  • Combine all Dry Spices into a small bowl. High quality spices will make your chili really stand out. Omit the cayenne if your Chili Powder has enough kick.
  • Drain and rinse your Dark Red Kidney Beans and Sweet Corn, and add to your slow cooker along with your Crushed Tomatoes. Set slow cooker to Low.
  • Dice your Onions and Red Bell Pepper. Make sure to keep the onion and bell pepper dices around the same size so they cook the same. Crush or mince your Garlic Cloves.
  • Preheat a large skillet over medium and add your Olive Oil and tilt to coat the pan. Add the onion, bell pepper, and garlic. Sauté until onion is transparent and garlic is fragrant. Add to slow cooker.
  • In the same skillet add your Ground Turkey, cook until browned and no pink remains. Add your Dry Spice mixture and cook on low until fragrant. Add to slow cooker.
  • Add all remaining ingredients to slow cooker, stir well. Put the lid on the slow cooker and let cook for 3 hours.
  • Enjoy with sour cream, shredded cheddar or any of your favorite chili toppings. Frito's are a great option for a little crunch.
